The dominant Vietnamese product sold against a vacuum dried jackfruit chips wholesale enquiry is vacuum-fried: jackfruit cooked in vegetable oil at roughly 90–100 °C under vacuum, so the ingredient list carries two lines rather than one. Soft-dried, oil-free crisp-dried and freeze-dried are separate goods with different fresh-fruit input, different packaging duties and, under Chapter 20 Note 1(a), a different tariff heading.
Is “vacuum dried” the same as “vacuum fried”?
No. Vacuum frying cooks the fruit in oil under reduced pressure. Vacuum drying and freeze-drying take water out and add nothing. Vinamit’s published declaration for its vacuum-fried jackfruit is fresh jackfruit 98% plus vegetable oil, which is the honest description of what most Vietnamese “vacuum” jackfruit is.
That single word costs money in two places. If your end use is a clean-label or oil-free line, a vacuum-fried chip is not a cheaper version of the product you wanted, it is a product you cannot use: the US brand Upton’s Naturals declares its own jackfruit products free of gluten, soy and oil. Frying also moves the goods out of Chapter 8 and into Chapter 20, which changes the duty and can invalidate a preferential origin claim written against the wrong chapter.
A genuine oil-free crisp-dried jackfruit line exists in the Vietnamese market, distinct from the fried one, but it is smaller and it is rarely what arrives when a buyer writes “vacuum dried” into an enquiry. Ask for the ingredient declaration before you ask for a price.
What actually comes off each drying line?
Four goods reach buyers under one word, and they differ in what stays in the product, what binds it and what has to hold it. No binding ruling on a Vietnamese jackfruit product was located in any of the four forms, and the eight-digit line above is taken from the UK schedule, which mirrors the European CN rather than copying it character for character. Confirm the eight-digit line with your broker for all three Chapter 8 forms before the first entry.
The process figures behind those rows come from trade practice rather than from a published standard. Vietnamese vacuum-fry lines running jackfruit are described as working at roughly 90–100 °C under about 700 mmHg and cutting to a 2–4 mm chip, which is also the chip size on the vacuum-fried specification published on this site; a freeze-dry cycle pre-freezes near −40 °C and then runs for hours, against the minutes a fluidised-bed IQF tunnel takes. Ask the facility for its own written parameters rather than borrowing these.
Published Vietnamese soft-dried specifications, including this site’s own, state ≥68 °Bx with no added sugar and no artificial colours or preservatives. On the freeze-dried side, Bamboo VIP Food publishes half-bulb format at under 5% moisture from Thai-variety fruit. The oil content of Vietnamese vacuum-fried chips is the first thing buyers ask about and no published figure for it was located, which is a specification line you will have to set yourself.
Does the frying step change the tariff heading?
Yes, and the mechanism is legal rather than commercial. Chapter 20, Note 1(a) of the Customs Tariff Schedule excludes from Chapter 20 fruit prepared or preserved by the processes specified in Chapters 7, 8 or 11. Drying is a Chapter 8 process. Frying is named in none of them, so fried fruit falls out of the exclusion and into heading 20.08.
Two independent binding UK Advance Tariff Rulings, 600008608 and 600007998, both on banana slices fried in coconut oil, both landed at 2008 99 49 80 with the frying as the deciding element under GIR 1. Those rulings are about banana; no ruling on fried jackfruit was located, and it is the mechanism rather than the commodity that transfers. On the Chapter 8 side, UK Advance Tariff Ruling 600011414 placed pressed dried tamarind at 0813 40 65 00, and the eight-digit line 0813 40 65 names jackfruit on its face.
Vietnamese export-procedure guidance reports export duty and VAT at 0% across the candidate lines, so nobody on the Vietnamese side carries a financial consequence for getting the heading wrong; the exposure sits with the importer at post-clearance audit. How much fresh jackfruit makes one kilogram of finished goods?
About five kilograms of peeled, de-seeded fresh jackfruit for one kilogram of freeze-dried, on the only clean, jackfruit-specific, technology-specific figure published: FD Food states 150 g of fresh bulb for 30 g of finished product. That ratio is what a price per kilogram is answering, and it is almost never on the offer sheet. Note what makes the figure usable: they state the basis.
The listing layer answers a different question. Offers under the words “dried jackfruit” have been recorded spanning 0.64 to 12.0 USD/kg, which is not a market but several goods sharing a phrase, and Tridge’s reported unit prices tighten it without fixing it: Vietnam at 4.95–5.36 USD/kg through 2025 and 6.01 in February 2026, against Sri Lanka at 9.60 and Mexico at 3.37 in March 2026. Those figures aggregate a residual heading that cannot tell a fried chip from an air-dried strip.
Ask two Vietnamese processors for a conversion ratio on vacuum-fried chips and you may be told eight to one by the first and twenty-something to one by the second. Both can be telling the truth. The first counted from the de-seeded bulb after hand-cutting; the second counted from the whole fruit as it came through the gate. Rind, spines, rag, core and seed are most of a jackfruit by weight, so the two bases differ by roughly a factor of three, and the ratios circulating in the Vietnamese trade are estimates that nobody has published a measurement for.
No measured edible-bulb share has been published for the Thai super-early variety that dominates Vietnamese planting. Two unmeasured ranges circulate instead, which is part of why the recovery figures downstream stay unverified.
VinFruits Global asks the partner facility for the material balance in kilograms of whole fruit received per kilogram of finished goods, with the basis written on the sheet, before a specification is agreed, because a recovery figure without its basis is two different numbers.
Send two questions back on any dried jackfruit offer: how many kilograms of fresh fruit made one kilogram of this, and did you count from the whole fruit or from the de-seeded bulb? A supplier who cannot answer both has not run a material balance, and a supplier who has not run a material balance cannot hold a price.
Why does cheap fruit not make a cheap chip?
Because the conversion ratio and the hand labour travel with it. Jackfruit latex gums knives, belts and gloves; blades are wiped with cooking oil to keep working. Splitting, bulbing and de-seeding cannot be engineered away at industrial scale, so the largest labour line in every jackfruit product is a step technology does not reduce.
There is third-party evidence for the pattern in an adjacent fruit. The Commodity Board reported on 20/06/2026 that Vietnamese banana chips, whole-slice conventional, stood at €3.40/kg FOB Hanoi against Philippine chips at €2.37/kg FCA Dordrecht, a price that already carries freight into Europe. Raw-material advantage and finished-goods advantage are different things.
The fruit price is also unstable in a way the finished price inherits. Vietnamese farmgate jackfruit moved across roughly a nine-fold range in the twelve months to August 2026, and three of the four documented drivers have nothing to do with weather: more than 90% of Vietnamese jackfruit exports go to a single destination; a cadmium-testing bottleneck left around fifteen accredited laboratories nationwide in early May 2026, rising to 37 GACC-recognised facilities by 26/06/2026; and planted area went from 58,511 ha in 2023 to about 84,000 ha in 2025, up 44% in two years, much of it in Đồng Tháp, the largest jackfruit province. Run that swing through a whole-fruit conversion ratio in the twenties and it reaches the finished good multiplied. An annual fixed price on this product is a position somebody is taking, not a courtesy.
Does the same 12-month shelf life apply to all three?
It is claimed for all three, and the claim is doing no work. The three dried-jackfruit specifications published on this site all carry 12 months at ambient, ≤25 °C, relative humidity below 65% — identical wording across products whose finished moisture is not remotely identical. Most competing pages do the same. That is a claim about the bag, not about the fruit.
Where finished-moisture bands have been measured at a Vietnamese plant, the measurement was on durian: the Vietnamese processor Green Tropical publishes 6–8% for freeze-dried, while the roughly 3–5% for vacuum-fried and roughly 15–20% for convective soft-dried that circulate alongside it are trade estimates. Those are durian numbers. Treat them as the shape of the difference between the technologies, not as jackfruit values.
Soft-dried product keeps a substantial share of its water, but dissolved sugar binds it, and the product is comparatively forgiving of a carton opened in a humid warehouse. Vacuum-fried chips and freeze-dried pieces are not: they pull moisture out of the air fast enough to go soft, and a crisp product that has gone soft is not marginally off-specification, it is a different product. That is why the fried line in Vietnamese practice is packed under vacuum or nitrogen and the soft-dried line generally is not, and why a quotation that does not break packaging out as its own line has not been read yet.
All three ship in ordinary 40 ft dry containers rather than reefers, out of Cát Lái or Cái Mép, and they cube out before they weigh out at roughly 8–12 tonnes, so the pack format that protects the crisp lines is a freight number as well as a shelf-life control.
What water activity should you specify when nobody publishes one?
No published water-activity figure exists for Vietnamese soft-dried, vacuum-fried or freeze-dried jackfruit, in any of the three forms. That is the finding, not a hedge. There is no Codex standard and no UNECE standard for jackfruit either: mango has CODEX STAN 184 and pineapple has CODEX STAN 182, and jackfruit has nothing to fall back on.
You set the number, then you make it enforceable: name the test method, name the party who measures, name the sample state and sample size, and require the result on every consignment certificate of analysis. A threshold with no method and no named party to measure it is unenforceable in a dispute. Do not accept a method-free figure, and do not name a method that nobody has checked against the laboratory your destination market actually uses.
The reason to be strict is mechanical rather than bureaucratic. On a sugar-carrying soft-dried line, water activity set too high means mould before the twelfth month; set too low and the product goes hard and stops being soft-dried. A workshop that judges this by feel rather than with a meter on site cannot hold either end of that range. The certificate panel to require on a dried line is moisture, water activity, microbiology (total plate count, yeast and mould, E. coli, Salmonella), pesticide residues, and sulphur dioxide or other declared additives.
Which of the three needs FDA scheduled-process filing?
Water activity decides which United States regulatory regime a jackfruit product falls into. Under 21 CFR Part 114, a food is an acidified food only where its equilibrium pH is 4.6 or below and its water activity is above 0.85; where equilibrium pH is above 4.6, 21 CFR Part 113 governs it as a low-acid canned food. Dried jackfruit in all three forms sits well below water activity 0.85 and therefore falls outside both. The consequence is that dried jackfruit entering the United States needs the manufacturing facility’s FDA Food Facility Registration and nothing further on the process-filing side: no FCE number, no scheduled process on file. Canned young jackfruit in brine is the opposite case and needs both before goods enter. One specification line decides which paperwork exists and, more usefully to a buyer, whose paperwork it is.

Wholesalers, importers, distributors, brokers, etc. are not required to register and file processes.
So the registration you audit is the manufacturing facility’s, not the trading company’s and not your customs broker’s. Ask for it under the name of the plant that will actually dry your goods, and check that the two match.
What makes a dried jackfruit specification enforceable?
With no Codex, no USDA grade standard and no EU marketing standard covering processed jackfruit, every tolerance you have is a contract tolerance. The phrase “to international standard” is an empty clause here because there is no such standard to point at. What replaces it is a signed two-party specification annexe carrying a version number and a date, a signed defect photo set, and a golden sample retained at both ends.
Separate defects by consequence rather than blending them into one acceptance level. Mixing legal thresholds, safety thresholds and cosmetic thresholds under a single number is what lets a supplier negotiate over things that are not negotiable.

On foreign matter, do not copy a millimetre table into the specification as though it were a standard. BRCGS Food Safety Issue 9 requires the business to validate its own metal-detector sensitivity on the specific product and specifies no figure. The clause that works is a demand for the validation report run on this product, at this pack format, with the date it was run.
How should a lot be sampled and released?
Sample against a published plan rather than a number the supplier proposes. Codex CXS 233-1969 at AQL 6.5, Inspection Level I gives directly usable pairs for 10 kg cartons, and the plan is pasteable into a purchase order as written.

Those pairs are the plan’s own figures for units of net weight over 4.5 kg at Inspection Level I. Cite the standard, the level and the AQL in the annexe and check the pairs against the edition in force, because what governs in a dispute is the plan itself, not a count anyone has retyped.
Codex CXS 75-1981 supplies the rest of the frame where you need one: a three-tier defect score with a total cap sitting above the individual tiers, and a sample unit of 300 g for slices, dice and pieces, stated as drained weight. Drained weight is canned-goods terminology, so that sample unit does not carry across to a dried product as written — set your own against your own pack. It is not a jackfruit standard: borrow the structure, not the numbers.
Four release clauses matter more on this product than on most, because all four depend on the water activity and the pack format having been agreed first. Testing no more than 60 days before shipment. At least 75% of shelf life remaining on arrival. Retained samples held at both ends to shelf life plus six months, stored at the condition printed on the label rather than in an office. And the one buyers forget: written ownership of broken product and fines. On a fried or crisp line the breakage fraction is real, and if the contract is silent it defaults to the factory, which means the factory has already priced it into the kilogram you are being quoted.
