Vietnamese purple rice is a striking heirloom grain variety prized for its deep purple-black colour when raw and its stunning iridescent purple hue when cooked. Rich in anthocyanins, iron, and antioxidants, purple rice is a premium ingredient in the global health food and specialty grain market.
Vietnamese purple rice (also called black-purple rice) belongs to the heirloom grain family. Its bran layer contains dense concentrations of anthocyanin pigments — the same class of antioxidants found in blueberries and purple cabbage — which give the grain its characteristic colour. When cooked, the grains turn a deep, dramatic purple, making it visually distinctive for gourmet presentations. The grain has an exceptionally long average length of 8.1mm and a firm, slightly chewy texture with a mild nutty flavour.
Purple rice is significantly richer in anthocyanins and iron than standard brown rice, and contains substantial dietary fibre, manganese, and B vitamins. It is used in premium health food retail, grain bowls, luxury rice blends, rice flour for natural food colouring, Asian traditional medicine preparations, and gourmet restaurant menus. Its visual impact makes it particularly popular in Instagram-era food presentation.
